Some of the varieties are fermented as a field blend, in stainless steel tanks for 7 days at 20 30C, to extract flavour, structure and colour. Afterwards, the grapes are gently pressed. The Pinot Noir is added to the blend after trials. The wine then ages in tank for 6 months. It finishes malolactic fermentation in
